Millets are small-seeded cereal crops grown and consumed by people in developing countries in Asia and Africa. These ancient foods have been supplying consumers with major nutrients and health benefits for several thousand years. Although these foods have been cultivated and consumed since ancient times, the importance of their health benefits has started reaching a wider community in recent years. As a result, the United Nations declared 2023 as the International Year of Millets to expand the benefits of millets to the mass population around the world.

Millets: Nutrients With Enduring Health Benefits covers the nutrient contents of millet seeds and the health benefits that each millet may offer by consumption. This book introduces millets and their origins and provides details on majorly cultivated millets such as finger millet, pearl millet, foxtail millet, barnyard millet, kodo millet, proso millet and little millet. The amount of energy, minerals, vitamins, phenolic compounds, amino acids and their benefits are covered in detail for each millet in this book. Some millet recipes and preparation methods are also included, making this work a useful guide for researchers, health workers, nutritionists and millet researchers.

Dr S Antony Ceasar graduated from the University of Madras, India. Dr Ceasar has done postdoctoral research at the University of Leeds, UK and the University of Liege, Belgium. His areas of specialization are Plant Molecular Biology and Biotechnology. Most of his works were focused on millets. He developed the transformation system for finger millet and foxtail millet. His team has been involved in studying the plant nutrient transport mechanism with millets as experimental plants. He was awarded the prestigious Marie Curie Fellowship from European Union in 2012 and the BELSPO non-European Postdoc Fellowship from Belgium Government in 2018. He has been listed as the top 2% cited scientist in the world since 2022 by the Stanford University.
