Romeo Rojas, PhD, is a Professor of Agronomy at the Autonomous University of Nuevo León, Mexico, where he specializes in foods, biotechnology, and agricultural sciences. He is currently working on several government-funded research projects. He had academic stays at the University of Minho, Portugal, and the National Autonomous University of Mexico. Dr. Rojas has published many research papers in journals and book chapters and has participated in and contributed to over 50 scientific meetings. He is a member of the National Researches System (SNI) and the Mexican Society of Biotechnology and Bioengineering.

Guillermo Cristian Guadalupe Martínez Ávila, PhD, is a Scientist and Professor of Agronomy of the Autonomous University of Nuevo León, Mexico. Specializing in foods, biotechnology, and agricultural sciences, he has published research papers and several book chapters, participated in and contributed to over 50 scientific meetings, and is working on several funded research projects. He is a member of the National System of Researchers (SNI), Mexican Society of Biotechnology and Bioengineering, and Mexican Association of Food Chemistry and is a reviewer for several journals.

Julia Mariana Márquez Reyes, PhD is a Scientist and Professor of Agronomy at the Autonomous University of Nuevo León, México. She is a member of the National System of Researchers (SNI). Dr. Reyes is working on bioreactors with anaerobic activity for the removal of contaminants, phytoremediation for the control of heavy metals in water and soil, enzymatic activity and antioxidant capacity of plant organisms used in environmental biotechnology, and development of sustainable technologies. Dr. Marquez has published several research papers and book chapters and has participated in and contributed to several scientific meetings.

Ma del Carmen Ojeda Zacarías, PhD, is a Scientist at the School of Agronomy of the Autonomous University of Nuevo León, Mexico, specializing in engineering, biotechnology, and agricultural sciences. She is a reviewer for several journals and is a member of the National System of Researchers (SNI), Mexican Society of Plant Micropropagation and Vegetable Automation, Mexican Society of Phytogenetics, and Mexican College of Agronomists, North Division. Dr. Ojeda has published research papers and book chapters and participated and contributed to over 50 scientific meetings.
